Our signature 1,200-day process

For 1,200 days, we ingrain rigour and care in everything we do, and at every stage of the supply chain. For a piece of meat that’s enjoyed today, commitments have been made more than three years prior.

From our cow / calf producers to the domestic and international markets we supply, building and maintaining strong relationships is essential to how we run our business. It’s this approach that underpins our supply chain structure and ensures the sustainable production of our premium-branded beef. 

The Harmony supply chain

The five key elements that underpin our operations

  • 1. Breeding

    We partner with intergenerational farmers and breeders in premier livestock regions across southern Australia to source the finest Wagyu calves. Our farmers are well known for their breeding success and quality genetics. Our cattle spend around eight months with their mothers before weaning and grazing on lush, pristine pastures.

  • 2. Backgrounding

    After our cattle are weaned, they are backgrounded on premier grazing properties across southern Australia – ensuring a healthy start to our specialty feeding program. To maximise marbling, Wagyu cattle must be on a consistent and high nutritional plane across their lifespan.

  • 3. Feeding

    We grain feed our Wagyu cattle for a minimum of 380 days on a naturally developed grain ration. This nutritionally specific ration is based on cereal grains, with no added hormones. Our steady and consistent growth regime yields high levels of marbling, quality and consistency in our products when processing occurs at approximately 24-30 months of age.

  • 4. Transport and processing

    Our cattle are transported in the safest, most efficient way, while maintaining the highest standards of animal welfare. They are processed and packed into premium-branded beef products in Victoria. Our processor is internationally known for its capabilities in high quality and consistency of meat packing.

  • 5. Sales and distribution

    We partner with global cold chain providers to deliver our award-winning beef, chilled or frozen, safely and securely to our customers – where it is enjoyed in restaurants and homes around the world. Each consignment that leaves our hands destined for another country is tracked digitally to ensure correct temperature is maintained and shelf life remains uncompromised. We work closely with our customers to deliver specialist marketing support tailored to their needs, including co-hosting events with wholesalers and chefs, and providing POS materials.
